This is because even stabilized wood can warp due to water absorption from the air, which causes swelling and movement. This happens for two reasons: 1 - simple filling of wood pores with resin hardly does anything to limit swelling of the wood fibers; and 2 - resins used for knife handle stabilizing are incapable of stabilizing the transient micro pores that open and close based on the fiber water saturation, leaving a network of flexible, water absorbing regions. These facts have been known in the stabilizing industry for around 60 years, with a multitude of approaches developed and employed industrially to circumvent these issues. Unfortunately, the wooden knife handle industry has been reluctant to step away from the 1950s technology and into the 21 century.
